As the founding ingredient of Thyme, The Cookery School showcases the ‘love of the land’. Demonstrations, tastings, talks, garden tours, forages & cookery classes, are available. Classes often start in the kitchen garden, showing guests how the produce is grown before harvesting for their menu; before preparing & cooking their meal under the guidance of Thyme’s chefs. The 'Instinctive Cook' is our flagship class, starting with the best seasonal ingredients fresh from the garden or your local market and exploring flavour combinations that inspire creative, confident cookery. Other classes lead with culinary influences from around the world, whilst still using the freshest ingredients from the kitchen garden, farm and from local farmers and artisans. Underpinned by our ethos of the thoughtful sourcing of ingredients and sustainability.
Nurturing peacefulness, stillness and beauty from within, the botanical spa is an idyllic haven of peace and tranquility; a place for calm, mindfulness and meditation that provides respite from our busy lives. Guests are welcomed into the Greenhouse reception before being shown through to the Meadow Cottage for a bespoke menu of Thyme treatments in partnership with award-winning, natural British brand, Aurelia Probiotic Skincare. Our swimming pool is filled with fresh spring water which is taken from the natural underground water source that flows deep below the meadows on our farm. The water is filtered by a pioneering technique that keeps the water absolutely pure without the use of chemicals.
The 150-acre working farm is divided into an eastern lower half & a higher western half. The river Leach runs through the lower eastern side of the farm with its water meadows & rich alluvial soils; it is the perfect place for the kitchen garden situated on the edge of the meadows, safe from the flooding that happens naturally every year. We are improving and nurturing the kitchen garden with composting & manure, ensuring abundance from the land whilst protecting & maintaining a healthy rich soil. Featuring a newly planted herb garden, cutting gardens & poly-tunnels to extend the seasons, the garden is productive all year round, growing carefully-selected, unusual varietals to supply & inspire the restaurants, cookery school & spa. The water meadows & river banks are carefully managed as wild spaces to encourage native flora & fauna to flourish & thrive. Together they support a diverse ecosystem of wild flowers, otters, kingfishers, egrets & water voles, to name but a few. The surrounding countryside & villages are truly picturesque with lovely walks or cycle rides with picnics to truly immerse yourself. Guests are welcome to visit the kitchen gardens. However, Thyme has a working farm and as such it is important to follow the map provided by reception. The presence of livestock means that all dogs must be kept on leads.
